Greek flaming cheese. Kasseri or Kefalotiri cheese is often used. Brushed with butter and put in the broiler until the cheese bubbles. Brandy is poured over the cheese right away and lit on fire. Then everyone shouts OPA !
OPA! I'm drooling, melted cheese with brandy, mmmm OPA! Does life get better than that? lol Magnificent photo sweetie!

@Lorraine: The only way it gets better Lorraine is to be sitting on a Greek island by the Ionian sea eating it. Now I am drooling!

@Judy: As you know by now it is at Momma's. The main places serve it as well. Try it and see if you like it. It is an appetizer. What is nice about Momma's is the bring out a good size place of olive oil with seasoning for bread dipping. Have you ever had garlic potatoes? (Skordalia) I brought a mortar and pestle bowl from Greece just so I could make it here. If you eat it make sure everyone else eats it too, you will see why. Thank you for commenting.

@MaryB: I did see that movie, it was so funny. You just reminded me I have the DVD perhaps I should see it again. In my opinion the cheese is OK this way but it is more presentation than taste. Thank you for commenting Mary
